Explore the Copan ruins
If you’re not already ruined out by this point and your budget allows it I would recommend going to these mayan ruins. Set in the middle of the jungle, you can relax and enjoy the views from the top of the ruins too. You’ll probably spot some scarlet macaw which are the national bird of Honduras. You’ll also be able to hear some howling monkeys, they sound like tyrannosaurus rex, I presume?

Visit a butterfly sancturay
This Mariposario is part of a hotel complex which has a pool and a restaurant. You can start by stopping by the butterfly sanctuary and make your way up to the pool where you can enjoy a splash or two at a cost.
Cost: The sanctuary was free for us but I wasn’t sure if that’s because we arrived late. You’ll have to pay to use the pool regardless if you’re buying food and drinks. The food isn’t that great

Drink high quality coffee at Cafe San Rafael
Central America is famous for producing excellent coffee beans although it's not always easy to find an exquisite cup of coffee... I mean the one with all the swanky milk art on top of it. Cafe San Rafael is the perfect coffee shop if you're craving a flat white made with local produce. You can also buy merchandise there and bag of beans to take away too.
